Sausage scrolls

These are just the thing for a children's party. With two vegetables in the filling, you can rest assured that these homemade chaps are so much healthier – and tastier – than buying store-bought sausage rolls.


1 tablespoon olive oil

1 brown onion, finely chopped

300g beef mince

1 large carrot or ½ medium kumara (sweet potato), peeled, grated

1 large zucchini, grated

2 tablespoons finely chopped parsley

6 sheets (24 x 24cm) ready-rolled frozen puff pastry, just thawed

Tomato sauce, to serve

Preheat oven to 200°C. Line 4 baking trays with non-stick baking paper.

Heat olive oil in a frying pan over medium heat. Add the onion and cook for 5 minutes or until softened. Place remaining ingredients – except pastry – in a large bowl and add the cooked onion. Use your hands to mix until well combined.

Divide the mixture into 6 equal portions. Place one portion of mince mixture along the edge of each pastry sheet. Roll up as tightly as you can. Cut crossways into 1.5cm slices. Place on prepared trays.

Bake for 15 minutes or until golden brown and puffed. Serve warm with tomato sauce.
