Passionfruit banana sorbet
If you're lucky enough to have a passionfruit vine at home, you'll always be looking for ways to use the delicious fruit in your cooking. This is one of my favourites and it takes just moments to make in the Thermomix.
If you don't have maple syrup on hand, you can use the same amount of icing sugar. The maple syrup is simply a less refined, more nutritious option.
2 bananas, peeled, chopped
2-3 passionfruits (pulp only)
2-3 tablespoons maple syrup, to taste
150 g ice cubes
- Serves 4
Place banana into a plastic container or snaplock bag and freeze for several hours or overnight until frozen solid.
Place all ingredients into mixing bowl and mix 30 sec/speed 10, gradually increasing speed from speed 1 to speed 10. Scrape down sides of bowl and repeat.
Serve immediately or, for a firmer consistency, freeze for 30 minutes before serving.
