Avocado coconut ice cream

There’s something so satisfying about making your own ice cream, particularly when it’s as delicious as this one! The combination of the coconut, avocado and lime is absolutely magical.


1 x 400ml tin coconut cream

1 large ripe avocado

60 g (1/3 cup) icing sugar

1 limes, zest finely grated, plus extra zest to serve (if liked)

Pour the coconut cream into an ice cube tray and place in the freezer for several hours until frozen.

Scoop the avocado flesh into a high-powered blender or Thermomix. Add the icing sugar, lime zest and the frozen coconut cream cubes and blend for about 30 seconds or until smooth and creamy (for Thermomix users, blend 30 sec/speed 9, slowly increasing the speed from 1 to 9).

Serve immediately or return to the freezer for 1-3 hours to firm to your liking. Serve as is or sprinkled with extra lime zest.
